Shrimp Fajita Bowls: Family Dinner Done Right
A delicious and colorful shrimp fajita bowl loaded with veggies, spices, and served over rice for a satisfying family meal.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked brown rice
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
Instructions
- In a large bowl, combine the shrimp, olive oil, garlic, chili powder, cumin, paprika, salt, and black pepper. Toss to coat the shrimp evenly and let marinate for 15 minutes.
- While the shrimp is marinating, heat a large skillet over medium heat. Add the sliced onion and bell pepper, and sautu00e9 until they are soft and slightly caramelized, about 7-10 minutes.
- Add the marinated shrimp to the skillet and cook for about 5-7 minutes, until the shrimp are pink and cooked through.
- To assemble the bowls, divide the cooked brown rice among four bowls. Top with the shrimp and vegetable mixture.
- Garnish each bowl with sliced avocado, lime wedges, and fresh cilantro.
